Eating clean doesn’t mean you have to give up tasty beverages. This Blackberry-Thyme Tonic is an antioxidant packed substitute for alcoholic cocktails. It’s also a great excuse to head to a farmers’ market or a pick-your-own farm. Get your blackberries wild if you can and look for plump, dry, darkly-colored fruit that are neither too firm nor too squishy.
Prep time: 5 minutes
1 cup fresh blackberries
2 tablespoons lemon juice, plus a few lemon slices
3-4 sprigs of thyme
4-5 ice cubes
8 ounces club soda
a few drops of stevia or 1 teaspoon of coconut palm sugar
Place the blackberries, thyme, sweetener, lemon juice, and ice in a jar.
Muddle to break up the blackberries and merge the flavors. Place a lid over the container then shake well.
Strain into two glasses then top with club soda and add a lemon slice.
