Broccolini

Broccolini is a slightly bitter cruciferous, perfect for spring cleanses. An antioxidant packed side dish, this is elegant and delicious. Watch kids and those who aren't normally fans of regular broccoli gobble this one up!

For Cleanse, Gut, Refresh
serves 2 as a side

 

Ingredients

1 bunch broccolini

3 garlic cloves, sliced thin

¼ cup roughly chopped almonds

2 tablespoons olive oil

sea salt, to taste

red pepper flakes optional

 

Directions

Heat 2 quarts of salted water in a medium pot. Bring to a boil and then reduce to a simmer.

Add the broccolini, submerging in the water, simmering until just tender and soft (and bright green), about 2 minutes.

Remove from the water and strain well.

Meanwhile, heat a large skillet over medium high heat with a few tablespoons of olive oil.

Once warmed, add the sliced garlic and chopped almonds. Sauté until golden brown, then add the blanched broccolini.

Toss well, season with sea salt and top with red pepper flakes if desired.

Serve immediately.
