This is the perfect way to use up leftover chicken from any recipe, but especially the Slow Cooked Chicken from last week. Tender and flavorful, it’s reminiscent of pulled pork but Cleanse-friendly. Note that the pomegranate molasses might require some extra effort to find, but most health food stores do carry it and it’s worth it.

2 cups shredded cooked chicken
3 tablespoons pomegranate molasses (note, this is concentrated pomegranate juice, NOT the same as regular molasses, so they’re not interchangeable in this recipe. If you can’t find this ingredient, use the same amount of coconut nectar)
1 tablespoon apple cider vinegar
sea salt to taste
Shred/chop chicken, if you haven’t already done so.
Add the chicken, sweetener and cider vinegar to a medium sized pan.
Cook over medium heat, stirring frequently, until warmed through.
