A Quick Peach Salad Recipe to Get Excited About!

Posted by cleanteam

PeachAvocadoSalad updated

Nothing says summer like a delicious, juicy peach, so we’ve made them the highlight of this peach salad recipe. They pair perfectly with creamy avocados and toasty, crunchy macadamia nuts. These ingredients mix together to create a medley of nutrition that aid several areas of our health. Peaches have anti-aging effects and help with indigestion. The healthy fats in avocados help in cardiovascular health. The majority of fat in macadamia nuts is monounsaturated, which may help with metabolism. This satisfying peach salad is easy to make and goes well with just about anything. Enjoy!

Time: 15 minutes

Serves: 2 as a side and four as a condiment (if using as salsa or topping)

Peach Salad with Avocado and Macadamia Nuts Ingredients:

2 ripe avocados, cut into medium sized chunks

3 ripe peaches, cut into medium sized chunks

juice of 1 lime

1/4 cup macadamia nuts

2 tablespoon fresh cilantro, roughly chopped

1 teaspoon ground (toasting is optional) coriander seed

Directions:

Toast macadamia nuts in a pan over low heat until golden brown. When cooled, chop roughly and set aside.

Chop the peaches and avocados into the same size square-ish chunks and place in a bowl.

Add toasted nuts.

Squeeze lime juice over, and gently toss until well combined.

Grind coriander seeds and chop cilantro. Add to the rest of the ingredients and give another quick toss.

Serve over some fresh greens or grilled chicken. OR better yet, check in next Monday and pair with our delicious salmon quesadillas! Recipe coming!
