This is an absolute Clean kitchen staple, and a definite favorite of each Clean Chef. The greatest thing is that you can make this with anything you have on hand, seasonal and local vegetables any time of year, with lots of flavor possibilities. When you’re no longer cleansing you could always re-introduce tomatoes or eggplants or stick to the clean version, trying mushrooms, parsnips, olives, carrots or spinach. You can make any version of a nut or seed cheese (walnuts, macadamia, pumpkin or sesame seeds) or post cleanse try it with feta. So many possibilities, and all are amazing.
