Almond Butter Cookies with Chocolate are Paleo-Friendly

Our easy-to-make almond butter cookies are Paleo-friendly, gluten-free, and most importantly, freakin' delicious. They come out perfectly round, gooey in the middle, and the dark chocolate chips add a hint of sweetness. Sinful? Possibly…but your body won’t feel weighed down or sluggish after eating them.

Are Almond Butter Cookies Approved on the Cleanse?

Our almond butter cookies that are light and naturally sweetened with maple syrup and contain eggs so, even though they are quite healthy, they are not allowed on the 21-Day Clean Program. However, you can still maintain the results of your cleanse and treat yourself with almond butter cookies post-cleanse without guilt.

When we crave sugar or sweets, it’s great to have healthy alternatives on hand. You can prepare our almond butter cookies ahead of time and eat them during the week. You can even eat these cookies as a post-workout snack, instead of eating a processed protein bar

Did you know that dark chocolate in our almond butter cookies is one of the healthiest foods on the planet? Don’t get too excited, though, the health value largely depends on the quality of the chocolate you buy. Make sure the chocolate is 70% or higher, soy-free, and sweetened with low-glycemic sugars like coconut sugar. Take your dark chocolate addiction to another level by buying it raw. Raw cacao hasn’t been heated and has even more antioxidant benefits and live minerals. Adding dark chocolate to our almond butter cookies gives our bodies a good dose of rich antioxidants like resveratrol, magnesium, zinc, and iron.

When transitioning to improving your eating habits, one of our best tips is to not restrict yourself, but explore healthier alternatives, and to remember to eat everything in moderation. The key is starting your day with a nutrient-dense smoothie, eating high-quality foods when you're hungry, and having nourishing snacks on hand so you don't feel deprived.

Almond Butter Cookies

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Servings: 14

Ingredients:

1 cup creamy almond butter

¼ cup maple syrup

4 oz. dark chocolate bar (roughly chopped)

1 egg

½ tsp. baking soda

½ tsp. vanilla extract

½ tsp. ground cinnamon

a pinch of salt

Directions:

Preheat oven to 350°F and line 2 baking sheets with parchment paper.

Whisk almond butter, maple syrup, egg, baking soda, vanilla extract, ground cinnamon, and salt together in a bowl, and then fold in chocolate chunks. Use about 2 Tbsp of batter to make each cookie.

Bake in the preheated oven until edges start to turn golden brown, about 10 to 12 minutes. Cool cookies on baking sheet for 10 minutes, and enjoy!
