Un-Peanut Butter Chocolate Cookies
Peanuts are a legume that can be allergenic for some, so we avoid them during the 21-Day Clean Program and strongly recommend avoiding them even when you are off the cleanse. Non-organic peanuts are sprayed with harmful chemicals and organic often have a mold called aflatoxins. Many people are still extremely sensitive to pesticides on peanuts, even if they don’t have a life-threatening anaphylactic reaction,
As an alternative suggest raw nut butter for a healthy dose of fat, protein, and fiber. All nuts and nut butter are calorie-rich, but a small amount will satisfy cravings with easy-to-digest healthy fat to keep you full. The cashew butter in our chocolate cookies contains the antioxidant vitamin E that can protect us against pollutants and neurological diseases along with essential nutrients like vitamin B6, iron, and magnesium.
Our Chocolate Cookies are Free of Refined Sugar
Coconut palm sugar (made from the sap of a palm tree) is a cleanse-approved alternative to refined sugars and artificial sweeteners. It has a mild, sweet flavor making it a perfect replacement for sugar in baked goods. It is lower on the glycemic index than most sweeteners, meaning it doesn’t raise blood sugar as rapidly as other sugars. Coconut palm sugar also contains potassium which is important for fluid regulation and hydration. Be sure to buy pure coconut palm sugar, as some companies mix it with regular cane sugar.
Cinnamon in Our Chocolate Cookies for Healthy Blood Sugar Levels
While finding healthier sweeteners should be a priority for any treat, all sweeteners should only be consumed in moderation. When you do have sweet goodies like our chocolate cookies, pairing them with cinnamon helps to slow the absorption of sugar into the bloodstream by slowing down the breakdown of carbohydrates in the small intestine. This helps to prevent insulin resistance which can lead to metabolic disorders and diabetes. Additionally, cinnamon is also great for blood circulation, making it a heart-healthy choice.
Our healthier chocolate cookies are flour-free, giving them a gooey texture and freeing them from the inflammation and bloating that refined gluten-containing grains can cause. Gluten is one of the allergens removed during our cleanse, and if you find you are sensitive to gluten, you may choose to keep it out of your diet post-cleanse. You will also find once you try these cookies and other flour-free treats you don’t even miss it.
Healthy Grain Free Chocolate Cookies with Cashew Butter
1 cup raw cashew butter
1 cup coconut palm sugar, plus more for topping
1/2 teaspoon cinnamon
1 1/2 tablespoons raw cacao powder
2 eggs (eggs are not approved on the Clean Program)
1 teaspoon baking soda
2 teaspoons vanilla
Preheat oven to 350°F. Place all ingredients in a mixer or large bowl. Start mixing on low, slowly increasing speed until all ingredients are smooth and well-combined.
Line a baking sheet with parchment paper. Scoop heaping tablespoons of dough, and smooth between hands into even balls, keeping a couple inches of space between each ball of dough.
Use a fork to lightly press dough into flatter discs.
Sprinkle each cookie with more coconut palm sugar.
Bake cookies for 8-10 minutes. Let cool on a rack for 10 minutes before serving (if you can).
