We love using cauliflower rice to substitute rice or wheat in clean recipes. It’s so simple to blend, cook, and use in a variety of recipes. Grains are actually difficult for many people to digest, and you may notice indigestion or bloat after eating starchy grains like rice. Using cauliflower rice instead will help you to avoid this discomfort as well as lower your carb intake.

Cauliflower is extremely rich in essential vitamins and minerals. Eating more of this cruciferous vegetable regularly is a simple way to get many nutrients your body needs from one food. Did you know that one serving of cauliflower contains 77% of the recommended daily value of vitamin C? It’s also a good source of vitamin K, protein, magnesium, fiber, and potassium.
Coming up with different mixtures for veggie bowls can feel like a chore sometimes, and you get in the rut of using the same ingredients. To change things up from the routine, we added a mixture of classic Mediterranean ingredients to this bowl, including kalamata olives, cucumber, red onion, lemon juice, hummus, tahini, and parsley. All the good, healthy fats including the tahini, avocado, and olives are great for improving the appearance of your skin and giving long-lasting, stable energy.
A Little Bit of Fermentation Every Day
We also added fermented red cabbage to add color and beneficial probiotic enzymes to this dish! Incorporating more fermented foods in your diet provides your gut with healthy bacteria it needs in order to properly break down and absorb the nutrients in your food. If your gut flora is imbalanced you’ll notice brain fog, fatigue, poor sleeping patterns, intense food cravings, bloating, and constipation. Eating more fermented foods also have been shown to improve your immunity, so it’s great eat to help prevent getting a cold or flu.
We hope this colorful bowl can inspire you to switch things up and try something outside the box. Feel free to add chick peas or lentils for some extra protein power. The best part about this recipe is it only takes about 15 minutes to prepare. Once you’ve put everything together, you’re left with a colorful bowl!
Makes 1 Bowl
1 Tablespoon avocado oil
1 cup cauliflower rice
¼ cup cucumber (diced)
2 Tablespoons parsley
Juice of ½ lemon
½ cup baby spinach
¼ cup red onion
¼ cup red cabbage sauerkraut
¼ cup black kalamata olives
2 Tablespoons hummus (or beet hummus)
1 Tablespoon tahini
Parsley for garnish
Juice of ½ lemon to serve
Step 1: Roughly chop your cauliflower into small florets and place them in your food processor.
Step 2: Blend until cauliflower reaches a rice-like consistency.
Step 3: Add avocado oil to skillet over medium heat and mix in the cauliflower rice. Stir frequently and cook for about 5 minutes. Set mixture aside.
Step 4: In a small bowl, mix together the chopped cucumber, parsley, and lemon juice.
Step 5: To assemble your bowl add the cauliflower rice and the remaining ingredients in a circle: cucumber mixture, spinach, red onion, red cabbage sauerkraut, black olives, avocado, hummus, and hummus.
Step 6: Drizzle tahini over your salad and squeeze the juice from ½ lemon over your salad. Garnish with parsley.
