Deliciously Raw No-Bake Cashew Mint Pie

Whether you’re celebrating the first day of Hanukkah, preparing for the upcoming rush of Christmas treats, or simply looking for a delicious and nutritious dessert or snack, this no-bake cashew mint pie should be on your list.

This is a great recipe to add a scoop or two of our Vanilla Daily Shake for an extra protein boost. Dates provide sweetness and are full of vitamins, minerals, and fiber. Cashews also contribute sweetness, along with healthy fat and protein. Enjoy this sweet treat, guilt-free!

Serves 8

prep time: 2 hours, which includes chilling time

Ingredients

For the crust:

3 cups raw almonds

1 cup pitted dates

2 tablespoons coconut oil

1 teaspoon vanilla

For the filling:

4 cups cashews

8 ounces coconut milk

4 soaked, pitted dates

8-10 drops food-grade mint oil

¼ cup fresh mint leaves

Directions

Place the almonds, pitted dates, coconut oil, and vanilla in a food processor and grind until all the ingredients are well broken up and beginning to combine. The mixture is ready when you squeeze it and it sticks together without being too crumbly.

Use the almond mixture to make a crust in a 9-inch tart pan. Once completed, place in the fridge until firm.

Blend the filling mixture in a high speed blender until smooth, thick, and creamy.

Remove the crust from the refrigerator and fill with the cashew mixture. Use a spatula to smooth out the top. You can leave the pie as is or top with toasted coconut or fresh berries.

Place back in the fridge to firm up. Remove 30 minutes before serving. Cut into 8 even pieces.
