The Best Pulled Chicken Recipe For A Quick Meal

Pulled chicken is the perfect way to use up leftover chicken from any recipe, especially the Slow Cooked Chicken from last week. Tender and flavorful, it’s reminiscent of pulled pork but Cleanse-friendly, so don’t think that you cannot enjoy this mead during the 21-Day Clean Cleanse. Note that the pomegranate molasses might require some extra effort to find, but most health food stores do carry it and it’s worth it.

Serves 2

Pulled Chicken Ingredients

2 cups shredded cooked chicken

3 tablespoons pomegranate molasses (note, this is concentrated pomegranate juice, NOT the same as regular molasses, so they’re not interchangeable in this recipe. If you can’t find this ingredient, use the same amount of coconut nectar)

1 tablespoon apple cider vinegar

sea salt to taste

Directions

Shred/chop chicken, if you haven’t already done so.


Add the chicken, sweetener and cider vinegar to a medium sized pan.

Cook over medium heat, stirring frequently, until warmed through.

Serve with the Autumn Slaw we’ll show you next week, or in a gluten-free wrap with mixed greens.
