Ingredients:

1/4 cup lime juice

2 tablespoons lime zest

2 cups pineapple (frozen or fresh)

1 can full-fat coconut milk

Popsicle mold and sticks

 

Directions:

Zest and juice limes. Add all ingredients to a high-speed blender or food processor.

Blend on high until creamy and smooth. Pour the mixture evenly into each popsicle mold.

Freeze overnight. Store popsicles in the freezer until ready to eat.
